How fun to buy a pumpkin!

When I see pumpkins, I never see jack-o-lanterns, I see PIES.  Lots and lots of PIES.

When you don’t have access to canned pumpkin or if you just want fresh pumpkin pie, here is one of the easiest ways to cook and puree your pumpkin.

Wash your pumpkin in the sink.  I use a scrubbie, soap and water, rinse well.  20131006_073831

  • Preheat oven to 350 degrees
  • Cut in half, stem side on top.
  • Scoop out seeds.  I LOVE using a butter curler to scrape the sides but you can do it any way you like and use whatever household tool you think will work.

  • Place cut side down on foil lined baking tray (preferably with a lip for the juices

I have to do mine one at a time if it’s a big pumpkin like this one was this year

  • Bake for 2 hours or until the whole top is blackened and caved in on itself

  • Now, you can simply PEEL off the skin!  Tah-dah!  So easy.

  • Lift the flesh into a strainer that is sitting in a bowl to catch the liquid.  Let it drain well.

I can’t find my other photo but the next step is to use a wand blender (the easiest way) or a food processor or blender and

  • puree the flesh
  • Package in ziplock bags 2 cups per bag and you will have the recipe amount for a pie.
  • Label and freeze.
